Looking for the perfect romantic dinner for 2, this is the best choice if you want to leave a heavy impression on your companion. Served with wild rice, a salad and crusty bread, it’s just the perfect dish for date nights. It’s also easy to make, healthy, and you will definitely get a wow from that crowd you feeding. 

I have been enjoying this super easy lemon Rosemary salmon for some few years now. I remember in the past, I’ve been intimidated by cooking all sorts of fish, because i thought it would be too difficult to make and takes a lot of time. All of that changed when i discovered this super easy peasy recipe.

Cook time: 20 mins

Servings: 2

Calories: 257 kcal per serving 

Ingredients:

  • 1 sliced lemon
  • 4 sprigs fresh rosemary
  • 2 salmon fillets
  • salt to taste
  • 1 tablespoon olive oil or as needed

Directions:

  • Preheat the oven to 400 degrees F 
  • Put half of the lemon slices in one layer in a baking dish, then Layer with 2 sprigs fresh rosemary and next top with salmon fillets. Sprinkle with salt, layer with the 2 remaining rosemary sprigs, and top with remaining lemon slices. Drizzle with olive oil.
  • Let it bake in your preheated oven for 20 minutes. Enjoy 

Tips and tricks:

To make my salmon taste even more delicious, I add herbs, breadcrumbs, compound butter or yogurt.
