CHICKEN SPAGHETTI CASSEROLE

Made by combining tender pasta, chicken and some vegetables in cheese sauce, this delicious recipe is a frontrunner when it comes to comfort foods and will definitely endear you to the men in your family.

There are a million words you could use to describe the awesomeness of chicken spaghetti casserole, and yet, there aren’t enough words.

This simple pasta, chicken, cheese and vegetable combination can be tweaked in many ways to suit your family’s taste and to fit the ingredients that are available to you. There’s nothing to endear you to them like a good bowl of this casserole.

Total preparation time: 1 hour 40 minutes
Yield: 8 servings

Ingredients:

2 cups chopped cooked chicken breast

2 cups uncooked spaghetti noodles, broken into 2-inch pieces

1 cup (1/4-inch thick) slices celery

1 cup chopped red bell pepper

1 cup chopped onion

1 cup fat-free, less-sodium chicken broth

½ teaspoon salt

¼ teaspoons freshly ground black pepper

2 cans condensed cream of mushroom soup

Cooking spray

1 cup shredded cheddar cheese

How to make:

Step 1: Mix the cooked chicken breast, uncooked spaghetti noodles, sliced celery, red bell pepper and chopped onions in a big bowl.

Step 2: Add mushroom soup, salt, broth, and pepper in a different bowl and mix with a whisk. Add the soup mix to the chicken mix (from step 1) and mix well.

Step 3: Grease two 8-inch baking dishes with cooking spray. Pour the mixture (from step 2) in equal portions in both baking dishes,

Step 4: Sprinkle ½ cup of cheese over each casserole and then cover with cooking spray covered foil.

Step 5: Transfer the dishes into an oven preheated to 375 degrees. Bake for 30 minutes, take off the foil, then bake for an additional 15 minutes.

Step 6: Take out your two casserole dishes from the oven and enjoy with your family.

Tips:
