Slow-Cooker Potato, Broccoli and Cheddar Soup
*INGREDIENTS:
Β° 1 onion, chopped
Β° 1 carrot, chopped
Β° A bunch of chopped celery
Β° 2 minced garlic cloves
Β° A tablespoon of butter
Β° 2.5 cups of chicken broth
Β° 2 tablespoons of flour
Β° A cup of milk
Β° 2 potatoes, small cubes
Β° 4 cups broccoli flower, small cubes
Β° 1 cup grated cheddar cheese
Β° 1 tablespoon of grated parmesan
Instructions
Chop the onion, carrot, celery and garlic in a food processor, melt the butter in a saucepan over medium heat and add the chopped vegetables. Stir for 5 minutes.
Add the flour, salt and pepper and mix well, add the broth, milk and potato cubes, and bring to a boil, leave to stand for 15 minutes.
Add the broccoli flower and the Parmesan and leave to stand for 5 minutes. Add the cheddar cheese, mix well and remove from the heat.
Take 2 cups of soup and grind them in a blender, return them to the pot.
