Ingredients

6 oz angel hair

1 lb boneless chicken, cut into pieces

¾ cup of white wine

Instructions for Italian Pasta with Chicken and Scampi

Follow package directions to cook pasta al dente.

When you’re done, set the pasta aside after draining it.

Sprinkle 1 tablespoon lemon juice and a little salt and pepper over the chicken.

Add chicken to skillet coated with cooking spray.

Cook the chicken for 4-5 minutes. Stir and turn the chicken often for even cooking. When the chicken is done, remove it and place it on a plate. Put aside.

Clean your pan and spray it again before adding butter. Once the butter has melted, add the garlic, salt and pepper.

Cook the garlic in the butter for at least one minute. Then add the wine, lemon juice and broth.

Bring the mixture to a boil then reduce the heat to simmer until the liquid is about ¾ cup.

Add your flour to the mixture and mix well to incorporate. Let the flour cook over medium heat for about 60 seconds.

Add the prepared chicken and sauté for a few minutes.

Plating:

Use about ¾ cup of pasta per plate. Place about a cup of chicken with scampi and its sauce on the plated noodles. Garnish with chives if desired.

Enjoy!

Frequently Asked Questions:

Can I use another type of pasta for this dish?

Yes, you can substitute angel hair with other types of pasta, such as spaghetti, fettuccine, or linguine. Just be sure to adjust the cooking time depending on the pasta you choose and cook it al dente for the best texture.

What type of white wine should I use in the sauce?

Choose a dry white wine that you like to drink, such as Sauvignon Blanc, Pinot Gris or Chardonnay. Avoid using overly sweet or dessert wines, as they can make the sauce too sweet and unbalanced. If you’d rather not use wine, you can substitute with extra chicken broth and a little white wine vinegar for acidity.

Can I add other ingredients or vegetables to this dish?

Absolutely! You can customize Italian Pasta with Chicken and Scampi by adding your favorite ingredients, such as sautéed mushrooms, cherry tomatoes, capers or olives. You can also add vegetables like spinach, peppers or asparagus. Be sure to adjust the cooking time of any added ingredients to ensure they are cooked through.
