Ingredients
4 large russet potatoes, peeled and cubed
3 large carrots, peeled and sliced
1 large onion
4 cups frozen green beans
4 cups frozen corn
4 cups tomato juice
2 cups of water
½ pound ground beef
2 bay leaves
½ teaspoon garlic powder
2 bay leaves
Instructions
In a large saucepan, combine potatoes and carrots, onion, salt and pepper.
Add 4 cups of water and bring to a boil
Cover the pot, reduce the heat to simmer
Simmer 25 minutes or until vegetables are tender.
Add the rest of the ingredients and continue to simmer for another 25 minutes
Stir occasionally
Remove the bay leaves before serving the soup
